We actually even have a female pilot who used M/K.
Learning to fly with it is a lot more difficult than flying with a stick but doable.
AB and RB is a good place to start if you're new. Sim Battles are lot more advanced but more fun IMO. The learning curve will slap you around quite a bit until it becomes fun. ;)

So my first proper SB went really well, (played on before by accident on an event with M/K and crashed before getting off the ground lol) but I plugged in my joystick, and scored two player kills before being swarmed by a squadron of six and shot down. Not bad for a first go I thought! :D

It's really nice to fly in SB, everything's so smooth and easy, only downside is not being able to pull negative G

You sure can and I do it a lot.
If you fly any of the carburetor planes, like the low tier Spitfires and Hurricanes, than your engine will choke up but its not an issue with any other planes.

There was actually a thread on WT SB forums with some dude accusing a BF109 pilot of hacking because this guy's engine turned off while he was rolling and the 109 shot him down shortly after. That guy was like "he made my engine turn off with his hacks and than he killed me" lol

Haha, that's brilliant, first thing I did before joining a game was SIM test flight to learn what it was like to fly, and it's limitations. So many people are too quick to cry hacker when they don't know what's going on.

As for the carb engines, I find it odd that the spits choke up but not the mossie, same engines, same problems IRL but not in game, the mosquito was notorious for punishing pilots who didn't fly them right.

Its only the lower tier Spitfires, anything above MkIIb is fine.
